An auction in Panama in May yields 50 pounds of Hacienda La Esmeralda (sold out!); We decide to invest in a few pounds of fresh Kopi Luwak; A supplier comes up with some Carmen Estate or George says we should give something a try out of his secret stock. The prices are far higher than our other great beans but for the specialty coffee fanatic or adventurer, this is what it is all about.

First, let's get the facts straight. Qopi is the Indonesian word for coffee, and luwak is a local name of the Asian Palm Civet, which looks more like a weasel than a cat. Civets consume the red coffee cherries, when available, containing the fruit and seed, and they tend to pick the ripest and sweetest fruit. The inner bean of the berry is not digested, but a unique combination of enzymes in the stomach of the civet add to the coffee's flavor by breaking down the proteins that give coffee its bitter taste. The beans are defecated, still covered in some inner layers of the berry.

The beans are washed, and given only a light roast so as to not destroy the complex flavors that develop through the process. Light roasting is considered particularly desirable in coffees that do not exhibit bitterness, and the most pronounced characteristic of Kopi Luwak is a marked reduction in bitterness. Kopi Luwak cups with a rich, heavy flavor with hints of caramel or chocolate. Other terms used to describe it are earthy, musty and exotic. The body is almost syrupy and it's very smooth. Incredible.

This is a really exquisite coffee! A large AA grade selection bean. The dry fragrance has a ¸pop), concord grape, with a bit of peppery spice. The cup has a strong winey, Syrah-like grape note to it, along with a lush fruited sweetness with hints of pear and strawberry at some roast levels. There are backnotes of Earl Gray tea, with it's characteristic Bergamot citrus oil accent.

It's a complex cup, and does not have the shrill citric notes of some Kenya lots, which might make it attractive to some who seek Kenya intensity without the screaming high brightness! If, on the other hand, you do like super bright espresso with intense plum/chocolate pudding sweetness. Try it!

Panamanian Coffees are taste treasures that do not have to make you gag to enjoy them. You do however have to understand their rarity and importance in the world of natural presevation, rainforest and environmental opportunity. Or rather, the limits therein.

Carmen Estate is a family owned farm under the current leadership of Carlos Aguilera. They produce about 1200 bags of green coffee annually; the coffee is of the catuai, caturra and typica varietals. It is harvested from December through March, hand picked by the Nobes, the indigenous people of Panama. The coffee is process by the wet method and both sun and mechanically dried on the farm. Carmen Estate practices strict agricultural and environmental standards; the farm is more than half forested by native trees, which naturally shade the coffee; it is certified by the Rainforest Alliance.

Cupping Characteristics: A very clean, bright cup, Carmen Estate is a classic Panama coffee full of subtle citrus acidity. It is refined and sweet with layers of delicate favors including chocolate and fruit.
